Amaranth seeds are a healthy, gluten-free, and a very versatile alternative to wheat or other grains. Amaranth seeds can be cooked in similar ways to other grains. It is actually not a grain but a seed from a broadleaf plant.
It has a crunchy texture with a pleasant fresh con-like aroma and a woodsy, peppery flavour.They are a great source of Iron and they provide also a good amount of fibre, calcium, magnesium, and vitamin C, while also having a much higher than for most other grains.
